A 25% deposit for your event must be made prior to all full service onsite catering events in order to secure that date. Final Headcount and Balance due need to be submitted 10  days prior to the event. The deposit amount is clearly shown on your Proposal or Invoice. This gives us ample time to submit your menu choices to our vendors. This gives our vendors enough time to guarantee our order for your event. We special order all our foods, beverages and supplies for your event. Everything is fresh. The final number will be considered a guarantee and not subject to reduction after that time. Small additions may be added 72 hours prior and paid for the day of the event. Payments are accepted by Check, Discover, Diners Club, MasterCard & Visa. Only Cash is accepted on the day of the event for last minute menu increases. 
Again, in arranging
for functions, the attendance must be definitely specified and submitted at least ten days in advance of the function.

Clear Sauce

Carolina-Style
Vinegar-based Barbecue Sauce commonly used in north Alabama, Tennessee and the Carolinas. Best used sparingly, on Barbecue Pork and French Fries.
Makes a good basting sauce for barbecuing.


Red Sauce

A traditional, mild, tomato-based Barbecue Sauce similar to those common to this area. best on Sausage, Ribs, Brisket, Chicken and Pulled Beef & Pork. Good on Smoked Turkey Sandwiches. Smoked Sausage, Chicken and Brisket sandwiches are served with a moderate amount of Red Sauce on the meat.
An excellent Basting Sauce for Grilling Ribs, Chicken and Sausage.


Hot Sauce

A very spicy, hot version of the Clear Sauce. Shake before using. Use very sparingly on any of the meats. Great on Slaw Dogs, or Turkey Sandwiches.


White Sauce

A Mayonnaise-based Barbecue Sauce frequently used in northern Georgia and Alabama. Often used as a Salad Dressing. Excellent Marinade for Chicken, Cornish Hen and Quail. Used as a Dressing on our Barbecue Taters. Try some on your hand-pulled Barbecue Beef or Pork Sandwich.


Mustard Sauce

A Mustard-based Barbecue Sauce common in Northeastern Florida, Eastern Georgia and South Carolina. Good on Pork Barbecue and as a Basting Sauce for Barbecuing Pork and Chicken.

Hand-Pulled Pork

The Hand-Pulled Pork is our most popular item. Can be eaten as a Sandwich or as a knife and fork food.

Served as a Sandwich "Carolina-Style"  is my Favorite way to eat it. I top the Meat with some BBQ and Hot Sauce then add some Dill Pickle Chips and some Creamy Coleslaw and grab some Napkins and if I am worried about my waistline I don't use buns I eat it that way with a fork.

Very lean and melt in your mouth tender, full of flavor; nothing else even close is available.

Secret Spices are added before Natural juices rendered during the 12-18 hour slow cook/smoke process are added back for flavor.

The last step in preparation is a quick, high-temperature char-grilling and a final light coating of Red sauce. We also Slow Roast the Chicken until it almost falls off the bone and let let your guests put sauce on it at the buffet. So you choose how you want it cooked and served


Sausage-So Tasty

The Barbecued Sausage Sandwich or Sausage Bites are simply delicious!

This moderately mild Sausage is made in Iowa especially for Barbecue Restaurants, so it's not something you can pick up in the grocery store.

Special flavors, Glazing and Fire Grilling add just the right taste to a Sandwich or Bites.

JerkBBQ:  Combines the best of traditional Southern smoked bbq and authentic Jamaican jerk to create tender bbq with a great smoke-ring and a complex herb, spice and smoke flavor, without the traditional "burn" of jerk.

 

Asian BBQ:  Marinated in a mojo/curry-coconut marinade, and then grilled/smoked on charcoal grill

 

Tropical BBQ: Marinated in a  mango vinaigrette marinade with garlic, onions and other spices, and then smoked or grilled.  Has a smoky, sweet and tangy flavor with a tender texture.

 

American (Southern BBQ) Seasoned with a hickory bbq dry rub and then smoked.  Has smoked flavor and a tender texture.

 

Spanish Mojo (Cuban/Puerto Rican BBQ) Marinated in a  tangy citrus mojo criollo marinade with garlic, onions and other spices, and then grilled.  Food has a smoky, tangy flavor and a tender texture.

 

Herb-Roasted BBQ: Seasoned in a secret blend of herbs and spices, including rosemary and thyme and then smoked or grilled.  Resulting food is mild with a great smoky herb flavor and a tender texture.
