We slow Roast our Pigs for up to 16-22 hours in specially designed equipment made just for roasting Pigs and Slow Cooking Barbecue. Our Pigs are basted with a unique mixture of spices and sauce to insure a moist, juicy, tender, delicious PIG ROAST which will be a memory maker for sure. Typical Serving Time is 1 hour, based on head count, larger groups may need more time*

FLORIDA'S "BAD TO THE BONE" LIP SMACKIN' BARBECUE, BARBEQUE, BBQ
Our Barbecue style originated in North Carolina and now popular in Florida, The Carolinas, Virginia, North Georgia, North Alabama, and parts of Tennessee.

I top the Meat with some BBQ and Hot Sauce then add some Dill Pickle Chips and some Creamy Coleslaw and grab some Napkins and if I am worried about my waistline I don't use buns, I eat it that way with a fork.



MEATS

WHOLE ROASTED PIG
Our imported Pigs are farm raised and processed in a USDA inspected facility. You may find a cheaper, not less expensive, but a cheap Pig Roast, so a lower price isn't a very good way to decide. You will not find a higher quality Pig Roast anywhere. If you are looking for a professionally cooked, Whole Roasted Pig, and you are interested in safety, quality, flavor, then we need to talk. Our number one goal has always, and will continue to be, to serve our customers Authentic Southern Style Real Pit Barbecue, Pig Roasts, Low Country Boils, Lobster Bakes, Caribbean, Hawaiian, Southern Comfort, Cajun, Cuban & Creole Cuisine Foods.
Achieving this goal isn’t easy, there aren’t any shortcuts, the hours are long and the work is hard. All foods are special ordered for your event. All foods are ordered fresh, prepped and cooked at your location. It is an immense undertaking to achieve this.

We still cook our all our foods just exactly like we were taught in North Carolina, Virginia, Florida and Georgia years ago when we worked in those States learning how to fire our pits using only seasoned charcoal and we never rush the process. This method of cooking produces remarkable flavors you just cant get in a restaurant.

HAND-PULLED PORK
The Hand-Pulled Pork is our most popular item. Can be eaten as a Sandwich or as a knife and fork food. Served as a Sandwich "Carolina-Style" is my Favorite way to eat it.  Very lean and melt in your mouth tender, full of flavor; nothing else even close is available.

HAND-PULLED BEEF
Try a sandwich with White or Red sauce. It's Great! Prepared similarly to the Pulled Pork. Can be eaten as a Sandwich or as a knife and fork food.

RIBS-DELICIOUS
If you have tasted any that are better, we want to know about it. The 6-step preparation starts with the biggest, meatiest, Pork Spare Ribs available. Baby Backs too.

CHICKEN-YUMMY
The Barbecued Chicken is moist and tender! Whole Quarters or separated into Leg and Thigh of the best-tasting Barbecued Chicken you've ever had. The last step in preparation is a quick, high-temperature char-grilling and a final light coating of Red sauce. We also Slow Roast the Chicken until it almost falls off the bone and let let your guests put sauce on it at the buffet. So you choose how you want it cooked and served.

SAUSAGE-SO TASTY
The Barbecued Sausage Sandwich or Sausage Bites are simply delicious! This moderately mild Sausage is made in Iowa especially for Barbecue Restaurants, so it's not something you can pick up in the grocery store. Special flavors, Glazing and Fire Grilling add just the right taste to a Sandwich or Bites.

TURKEY-SO GOOD
Try a Sandwich with a little hot sauce or eat it with a knife and fork! All Breast Meat Marinated and Smoked to perfection. Deep Fried Turkey for a delicious moist flavor is probably our most requested. Unusually moist for Smoked or Deep Fried Turkey.

BEEF BRISKET-SO TENDER
    
Can be eaten as a Sandwich or with a knife and fork with any  Sauce you like. The best flavored Beef of all. Our own Special Marinating and slow cooking/smoking process in one of our special designed Pits you see featured in this web site.



SPECIAL SAUCES
CLEAR SAUCE
Carolina-Style Vinegar-based Barbecue Sauce commonly used in north Alabama, Tennessee and the Carolinas. Best used sparingly, on Barbecue Pork and French Fries. Makes a good basting sauce for barbecuing.

RED SAUCE
A traditional, mild, tomato-based Barbecue Sauce similar to those common to this area. best on Sausage, Ribs, Brisket, Chicken and Pulled Beef & Pork. Good on Smoked Turkey Sandwiches. Smoked Sausage, Chicken and Brisket sandwiches are served with a moderate amount of Red Sauce on the meat. An excellent Basting Sauce for Grilling Ribs, Chicken and Sausage.

HOT SAUCE
A very spicy, hot version of the Clear Sauce. Shake before using. Use very sparingly on any of the meats. Great on Slaw Dogs, or Turkey Sandwiches

WHITE SAUCE
A Mayonnaise-based Barbecue Sauce frequently used in northern Georgia and Alabama. Often used as a Salad Dressing. Excellent Marinade for Chicken, Cornish Hen and Quail. Used as a Dressing on our Barbecue Taters. Try some on your hand-pulled Barbecue Beef or Pork Sandwich.

MUSTARD SAUCE
A Mustard-based Barbecue Sauce common in Northeastern Florida, Eastern Georgia and South Carolina. Good on Pork Barbecue and as a Basting Sauce for Barbecuing Pork and Chicken.

 
HOT BUFFALO SAUCE
One of the best Medium-Hot Sandwich Sauces in the World.
